Spaghetti with Chicken and Mushroom White Sauce

You won't believe that this recipe is from my daughter's child care centre.  Recently, the centre held a food demo of the kids' favourite dish,  actually the program was held to encourage family bonding activity.  My youngest pestered me to cook this for the weekend and so I relented.

You should know that this was a serving for her :)


I won't really call this quick and easy.  Quick and easy would mean to use canned soup *LOL* but of course, from scratch is still the best.  For this dish, it involves 2 steps.  You need to prepare the white sauce first then followed by the chicken and mushroom sauce.  I promise it is not difficult but you can prepare the white sauce a day ahead to make it easier for you.

This recipe can serve up to 4-5 adults.

White Sauce

What you need:
750ml milk
250ml water/stock ( I cheated using 1 chicken bouillon cube)
50ml oil
50g butter/margarine
75g flour, sifted

What you do:
1. Heat a pot and add oil and butter till butter melts
2. Pour sifted flour bit by bit and keep stirring till the flour changes colour
3. Add the milk and water and keep stirring till you get the consistency that you like, if you like it thicker, leave it on the stove a little longer but make sure you keep stirring
4. Turn of heat once you get the consistency that you are looking for, put it aside

Chicken and Mushroom White Sauce

What you need:
2T olive oil
1 large onion, chopped
3 clove garlic, chopped
400g button mushroom, sliced
200g carrot, diced
300-500g chicken breast, diced
400ml water
a bit of freshly grated nutmeg for extra aroma and flavour
salt & pepper to taste
1 litre white sauce (from above)
800g pasta, cook till al-dente

What you do:
1. Heat oil in pot over medium heat, once hot add onion and garlic stir fry for about 2 mins
2. Add mushroom and carrot, continue frying for about 5mins, stirring constantly until juices start to flow
3. Add chicken pieces, water, salt & pepper and stir well, cover and cook for about 7-8 minutes or till chicken is done and vegetables are tender, make sure you stir it once a while
4. Add white sauce and stir till blended and keep the sauce warm
5. Serve it with your choice of pasta
